Mellow Spice is a single-grain Irish whiskey, aged for ten years in bourbon barrels before being finished in Moscatel casks for two more. The result is a layered, aromatic pour, where toffee and vanilla mingle with orange zest and fresh herbs. On the palate, it’s a slow build—from gentle fruity tones to richer notes of nutmeg and butterscotch, eventually settling into a finish that moves from creamy sweetness to subtle bitterness.

Its companion, Toffee Dream, offers a deeper indulgence. This blended Irish whiskey, built on malt matured in bourbon barrels, opens with a wave of creamy vanilla and caramel-laden oak. As it evolves, hints of peppered pear, candied ginger, and warm spice add intrigue. The finish is medium-bodied and luxuriously smooth—familiar yet far from predictable.

Alongside staples like ex-bourbon and Madeira barrels, the brand incorporates less conventional finishes—like Moscatel and other fortified wine casks—to build unique, unexpected flavour profiles.
