Design has always been central to Carbone’s world, but here the interiors rise to an entirely new level. The space is imagined by Ken Fulk, the celebrated American designer known for story-driven environments, and realised with the regional mastery of Bishop Design. Together, they create a room that feels like a high-gloss film set, a jewel box where every angle glows.

 

Rich crimson velvets, polished wood, art-deco curves and Venetian-inspired accents anchor the signature Carbone aesthetic but Dubai allows the design to stretch deeper. Sculptural banquettes curve dramatically around the room. Intimate pools of golden light fall across marble tables. Bespoke artworks punctuate the walls with colour and irreverence. The energy is sensual, atmospheric, and charged.

 

Then comes the centrepiece


A breathtaking, floor-to-ceiling aquatic installation where ethereal jellyfish drift across an entire wall, glowing in soft blues and silvers, almost hypnotic. Carbone Dubai celebrates the brand’s greatest hits with enhanced ingredients and meticulous technique. The Spicy Rigatoni Vodka, perhaps the most famous pasta dish in the world, arrives molten and glossy, each tube perfectly al dente, coated in a fiery Calabrian chilli and tomato sauce sharpened with aged parmesan. It is simple, iconic, unforgettable.

 

The Caesar alla ZZ unfolds as performance: crisp whole leaves carved at tableside, an anchovy-rich dressing mixed to order, and long shavings of Parmigiano falling like ribbons. The Veal Parmesan, Carbone’s legendary showpiece, is engineered to impress, an oversized, golden-crusted cutlet drenched in San Marzano sauce and smothered in molten mozzarella.
